Superfine Carnaroli Rice
The Carnaroli Rice is the superfine rice that occupies the highest quality levels of Italian production.
The Carnaroli Superfine Rice is distinguished by a very large grain and a high percentage of amylose.
The amylose is the starch of rice that while cooking becomes essential to ensure the right balance between the consistency of the grain and its ability to absorb the sauce.
The Carnaroli Superfine Rice produced by the Azienda Agricola Guglielmini is the ideal rice for many recipes based on rice, especially for risotto (risotto alla Milanese, risotto al vino rosso, risotto alla zucca, arancini di riso, timballi di riso, etc.) and rice salads.
INGREDIENTS FOR 6 PEOPLE
Risotto with Grapes
- 600 GR CARNAROLI RICE
- 50 CHOPPED ONION
- 100 GR OF BUTTER
- 100 GR GRATED CHEESE
- 60 GR OF WHITE WINE
- 60 GR OF TENDER VINE LEAVES
- 30 GR OF GRAPES
- 300 GR OF MEAT BROTH
- SALT AND PEPPER
PREPARATION
In a saucepan, melt the butter, add the chopped onion and let it appear, add the rice and toast it. Deglaze with the white wine and continue cooking, gradually pouring in the broth.
Clean and wash the vine leaves, dry them and cut them into thin strips. Add to cooking rice.
Peel and pit the grapes, add them to the rice which will now be cooked al dente, stir the rice with grated parmesan on the heat off.
Serve on a hot plate decorating with tender vine leaves, grapes and flakes of parmesan.
